The owners of Sol Cocina in Newport Beach have done it once again! They are rolling out a new restaurant concept called Solita Tacos and Margaritas in Huntington Beach.  Partners Matt Baumayr, Rich Howland and Executive Chef Deborah Schneider have created yet another unique interpretation of contemporary Mexican food, with its own personality, look and distinctive menu. When attending the media event I got to try a variety of the new fresh and fabulous Mexican Food items that Chef Deborah Schneider has created and I thoroughly enjoyed them all!  This new restaurant is located below “The Residences” inside of the Bella Terra shopping center in Huntington Beach and has something to offer for everyone! There are a variety of mouth tantalizing Mexican plates served, along with an opportunity for simple taco plates, appetizers, soups, salads and of course margaritas along with a variety of many other specialty beverages!  The bar menu at Solita takes an equally fresh approach to traditional Mexican cocktails, featuring only fresh fruit-based and agave-sweetened margaritas made with 100% blue agave tequilas!

The interior of the new Solita restaurant is designed after the owners made several trips to Mexico to check out different regions and décor they would like to use inside.  After much thought, the architectural surroundings of Solita are pretty amazing! The inside of the restaurant is quite large and could accommodate large groups or small happy hour gatherings! The 150-seat space will offer 80 seats indoors and 70 seats in a covered all-weather patio, with 20 of those seats shared in a unique indoor/outdoor bar.

Some of my personal favorite menu items at Solita included the Queso al Forno which had fresh Mexican bubbling cheeses with green onions and Serrano chiles in an iron cazuela, with corn and flour tortillas, Yellowtail Ceviche Tropicale with diced fresh Gulf of California Yellowtail, fresh squeezed lime juice, Serrano chiles,

cucumber, tropical fruit, salsa fresco, and avocado.  I also loved the Oak roasted chipotle chicken, which was a whole chicken rubbed with chipotle, spices and garlic, smoked and slow cooked on a wood grill and the Wood-Grilled wild fish which is made from only the freshest season local fish and grilled with lime butter! YUM!!!

Head in to check out Solita for their grand opening, which will be on Thursday, the 26th of December.  I am sure it will be packed in the Bella Terra center for all of the after Christmas sale shoppers and you will definitely want a place to get away from it all!
